This is beef with main-character energy: deeply seared, glossy, and stacked so every bite lands loud. Built for the scroll and the table, it turns a hot, crusty handheld into a full-on beef moment with sharp pickles, melting cheese, and a punchy pan sauce that drips on purpose.
Step 1: Pat the steaks dry and season both sides with kosher salt, cracked black pepper, and garlic powder. Let them sit at room temperature for 10 minutes while you slice the onion very thinly and whisk together the mayonnaise and Dijon.
Step 2: Heat a skillet over medium-high heat with the oil. Sear the steaks for 2 to 3 minutes per side for medium-rare, adding 1 tablespoon butter in the last minute and basting the beef until the crust is deep and glossy. Transfer to a plate and rest for 5 minutes, then slice thinly against the grain.
Step 3: In the same skillet, add the sliced onion with the remaining butter, balsamic vinegar, Worcestershire sauce, and honey. Cook for 3 to 4 minutes until jammy and darkened, then remove from heat.
Step 4: Lightly toast the bread in the oven or skillet. Spread the mayo-Dijon mixture on one side of each slice, then layer provolone, sliced beef, caramelized onion, pickle slices, and arugula. Close the sandwich and press it in a skillet or under a heavy pan for 1 to 2 minutes per side until the cheese melts and the bread is crisp.
Step 5: Slice diagonally and serve immediately while the beef is still juicy and the cheese is molten.
