This taco turns risotto into a warm, nostalgic centerpiece with a refined, editorial finish: crisped rice that eats like a golden risotto cake, tucked into a soft tortilla with bright greens and a silky crema. It captures the current comfort-forward mood around risotto while giving it a playful, restaurant-worthy shape built for sharing.
Step 1: Simmer the broth in a small saucepan and keep it hot. In a wide skillet, melt 1 tablespoon butter with 1 tablespoon olive oil over medium heat, then cook the shallot until translucent, about 2 minutes. Add the garlic and Arborio rice, stirring until the grains look lightly toasted.
Step 2: Add the white wine and cook until nearly absorbed. Ladle in the hot broth a little at a time, stirring often and letting each addition absorb before adding more, until the rice is creamy and just tender, 18 to 22 minutes. Stir in the peas, spinach, remaining butter, Parmesan, mascarpone, lemon zest, lemon juice, salt, and black pepper. Spread the risotto in a shallow dish and chill 10 minutes so it firms slightly.
Step 3: Shape the cooled risotto into 4 oval patties. Dredge each in flour, dip in beaten egg, then coat with panko. Pan-sear in the remaining olive oil over medium heat until deeply golden and crisp, about 3 minutes per side.
Step 4: Warm the tortillas in a dry skillet or oven. Mix sour cream, crema or yogurt, and chives for the lemon-parmesan crema. Assemble each taco with a crisp risotto patty, avocado slices, pickled red onions, microgreens, and a generous drizzle of crema.
